Raw meat is preserved by sealing within a pouch of oxygen permeable material such as polyethylene film and sealing this first pouch within an outer pouch of oxygen impermeable material such as polyvinylidene coated regenerated cellulose film; the interiors of the two pouches being substantially freed of oxygen by evacuating the air therefrom or by replacing it with an inert gas such as nitrogen. A number of other suitable film materials for the pouches are specified. The sealed package is stored under refrigeration. On removing the outer pouch, e.g. immediately prior to display for sale, entry of oxygen from the air through the inner pouch changes the colour of the meat from deep purple red to bright red. |
