An aqueous suspension of starch or comminuted starch-containing raw materials is introduced together with alpha -amylase and steam coaxially into a homogenising machine and mechanically and thermally gelatinised therein at 80-120 DEG C. Liquefaction and preliminary saccharification are effected by leaving the starch mucilage to stand at 70-80 DEG C. It is then cooled to 50-65 DEG C, beta -amylase and, where appropriate, alpha -glucosidase are added, and breakdown as far as glucose is carried out. The resulting sweet mash is then fermented. The process makes it possible to carry out continuous gelatinisation and preliminary saccharification with a considerably higher dry matter concentration and with a considerable saving in energy.
