PURPOSE:To obtain soft salted guts of a cuttlefish rich in roundness, flavor, and taste, by kneading and mixing the guts of a cuttlefish in a mixture of a sweet sake with salt thoroughly, adding slices of a skinned cuttlefish in the form of strips to the mixture, and enclosing and aging the resultant mixture. CONSTITUTION:A sweet sake or lee thereof, or a sweet sake treated to be undrinkable (containing several % common salt) is mixed with a small amount of salt, and the guts of a cuttlefish are kneaded with the mixture thus obtained. Slices of a skinned cuttlefish in the form of strips are added thereto, agitated thoroughly, enclosed, stored at 15 deg.C or below in a cold and dark place for about 1 month, and aged fully to give the aimed salted guts of cuttlefish having improved taste and softness. The addition of the sweet sake improves the taste. |
