发明名称 FREEZING OF FOOD
摘要 PURPOSE:To obtain a frozen food block which can be thawed uniformly in a short time without loss of the food such as breaking, peeling, etc., by coating the surface of each food with an aqueous solution of an organic acid alkali salt, and freezing the foods in a block. CONSTITUTION:A binder (e.g. gum arabic, starch, methyl cellulose, etc.) is dissolved in an aqueous solution of an organic acid alkali salt (e.g. sodium acetate, sodium malate, sodium citrate, etc.). Food to be frozen are dipped in the solution thus prepared to coat the surface with the solution, and frozen in a block.
