Field of processing apparatus, particularly heat exchanger with rotary cylinder, and improvement to scraping members. The device is of the scraped surface type, and has a scraping assembly comprised of a blade holder piece (19), with a blade (6), supports and handling means for said pieces and it is essentially characterized by an element (22) inflatable with a fluid, arranged along said blade to, under the effect of the fluid pressure, deform said blade and apply it with a substantially uniform force against said surface to be scraped.
