PURPOSE:To preserve a conger eel (anago) without deteriorating the freshness and flavor thereof, by heating the conger eel at such a temperature as to make even the center of the flesh resistant to freezing or preserving at a cold temperature without destroying the surface tissue due to an unsuitable heating temperature, and preserving the conger eel in a frozen state or at a cold temperature. CONSTITUTION:A conger eel (anago) is split apart and heated with steam or in an enclosed heating vessel at 85 deg.C for at least 4min or longer to heat even the center of the flesh uniformly. The conger eel is then preserved in a frozen state or at a cold temperature. |
