A method of producing and preserving stuffed pancakes comprises intimately mixing dough and stuffing before. cooking, said stuffing being used in the greater proportion and said dough only being used as a binder, the mixture then being cooked on a metal plate, provided with recesses having the dimensions of the pancakes, heated to 110-180‹C and the pancakes thus obtained, which have a diameter of 3 to 4 inches, being stacked in containers which are then hermetically sealed and sterilised. The stuffing preferably comprises the flesh of fish, crustacea, shell-fish, poultry, offal, molluscs, fruits, vegetables or cheese. A suitable plate is shown in Fig. 1, which plate is provided with recesses 2. The pancakes, after placing in a container may be covered with a protective substance such as butter sauce or jam. |
