Sausage prodn. involves filling a skin by a machine with a meat mixt. to produce an extended length of sausage. This may be twisted at intervals to create individual sausages. The resulting sausage(s) are collected in coils on a rod shaped carrier. They are first collected inside a rotating bucket shaped carrier and then transferred onto the rod for subsequent processing e.g. smoking. Process is for making sausages which require subsequent processing esp. smoking. It allows the sausage to be neatly coiled without altering the run off from the machine; it operates effectively and reliably and can be constructed and operated at low cost.
