The process control uses the continuously monitored core temp. for the material being sterilised, which is integrated over the sterilisation interval for ending the sterilisation process when a given Letal effect is achieved. The cooling of the material is initiated before obtaining the required Letal effect, so that the integral corresp. to the latter is arrived at during cooling. Parameters are monitored for each sterilisation process and supplied to a store in conjunction with the measured core temps., so that respective cooling can be extracted. The integrator for the measured core temp. and the store are both coupled to an adder, the output of which is compared with a reference value denoting the required Letal effect.
