<p>PURPOSE:An extract obtained by extracting rice bran with a lactic acid solution containing calcium is used as a part of the water for making alcoholic beverage, thus producing an alcoholic beverage of high mineral content without adverse effects on the taste and quality. CONSTITUTION:Rice bran or steamed rice bran is extracted with a lactic acid solution that is obtained by dissolving calcium carbonate, hydroxide or oxide in an aqueous lactic acid so that the weight ratio of lactic acid/calcium carbonate becomes 1/0.2-0.5 and the lactic acid concentration becomes 0.5-3%. The resultant extract is used as a part of water for making an alcoholic beverage such as Japanese sake.</p> |
