MANUFACTURING A WETTABLE POWDER

An instant powder is produced from a liq. (esp. whole milk) which normally gives a hydrophobic powder on drying. The process comprises simultaneously spraying the liq. and an aq. lecithin soln. into a spray-drying chamber through which a hot gas is passed, so that the 2 spray streams mix. Products which dissolve rapidly in water can be obtd. using small amts. of lecithin, with only minor modifications to conventional spray-drying equipment. The lecithin soln. pref. contains 5-18 (esp. 15) pts. wt. H2O per pt. wt. lecithin. It is pref. used in an amt. sufficient to give an instant powder contg. 0.1-0.5 (esp. 15) pts wt. H2O per pt. wt. lecithin. It is pref. used in an amt. sufficient to give an instant powder contg. 0.1-0.5 (esp. 0.2-0.3) wt. % lecithin.
