PURPOSE:To obtain the titled pasty food having no taste, smell and appearance of fish meat, by adding frozen butter or margarine to frozen fish meat which is previously fumigated followed by pouring a natural ingredient to make a food pasty as a binder to the fish meat which is ground and made into paste. CONSTITUTION:Fish meat is previously fumigated, the protein of fish meat is degenerated thermally and sterilized. Fishy smell of its own is removed and the meat is frozen. 20-30wt% frozen butter or magarine is added to frozen fumigated fish meat, and a natural ingredient to make food pasty, e.g., sodium alginate, tragacanth gum, etc. as a binder is also added to the frozen meat, which is ground and adjust to make its viscosity proper, so that an instantly edible food product of fish meat is prepared. |
