An aerated soft-serve product (e.g. ice cream, milk shake, frozen custard, sherbert, mousse) comprises as aerating agent, chlorotrifluoromethane and/or chloropentafluoroethane or a mixture of nitrous oxide and chlorotrifluoromethane or chloropentafluoroethane. The term "soft-serve product" means a frozen or semi-frozen product obtained by subjecting a liquid mix comprising milk fat, animal fat or vegetable fat to a temperature between -11.7‹C. and -1.1‹C., the mix thickening and congealing without freezing to a hard solid at the said temperature. The aerated product may be prepared by mixing the liquid mix with the aerating, agent, e.g. in its liquid state, under pressure and passing the liquid mixture to a freezer where the mix is chilled. |
