<p>A food prod. which is free from taste is prepd. from a de-fatted vegetable protein which forms an aq. suspension with pH =8, by rapidly and dynamically heating the suspension to 105-205 degrees C. and subjecting it to direct mechanical action, keeping the suspension for a short time under an excess press. sufficient to prevent evapn. of water from the hot suspension, suddenly releasing the press. on the heated suspension so that substances of unwanted taste and smell are removed with the evaporated water, and sepg. the vapours from the suspension, to give a taste-free vegetable protein prod. The process is esp. used for soya protein. The bitter flavour is removed from vegetable proteins, giving a taste-free, palatable, edible prod. which has good dispersibility and can be used in place of prods. such as milk.</p> |
