PURPOSE:To prepare the titled easily loosened rice having a nice taste without shape collapse of a rice grain and stickiness, by packing a polished rice treated with a cellulose and an aqueous solution of sucrose ester of a fatty acid in a container, sealing the container, and cooking the rice. CONSTITUTION:Polished rice which is thoroughly washed is immersed in water containing a cellulose for a suitable time to make the cellulose act on the surface layer of the rice grain, damage the cell membrane of the surface layer, and loosen the tissue structure of the grain. The treated grain is thoroughly washed with water to remove the cellulase, immersed in water and drained to give an immersed rice. The immersed rice and a cooking solution containing 0.1-0.5wt% sucrose ester of a fatty acid in water in a volume to give the final moisture content of about 55wt% including the moisture in the immersed rice are packed in a container, sealed, and sterilized by heat while cooking the rice. |
