PURPOSE:To make it possible to obtain a nice rice without a half-boiled part even by cooking a rice without immersing a rice washed with water in water and absorbing water, by cooling the rice to a temperature of about -20 deg.C or below. CONSTITUTION:A rice, e.g. unpolished, polished, unhulled or new or old rice, is cooled to about -20 deg.C or below, preferably about -40 deg.C or below, more preferably -60 deg.C or below, by directly spraying or adding liquefied carbon dioxide, dry ice or liquid nitrogen thereto. The cooling time is, e.g. 8hr or longer at -20 deg.C, about 30min or longer at -40 deg.C, about 10min or longer at -80 deg.C and about 60sec or longer at -180 deg.C. The rice thus cooled is heated to room temperature naturally or artificially while preventing the aggregation of moisture, and immediately cooked without immersing in water or absorbing water to give a nice rice free from a half- boiled part. |
