<p>The machine comprises a fixed, rigid, vertical ring through which the sausage is passed along the horizontal axis of the ring. A rolling ring is rotatable coaxially inside the fixed ring, running on two short lengths of ball bearing track between the rings, top and bottom. Both rings are laterally sandwiched between two stationary, coaxial, annular side plates. The side plates have inwardly projecting ribs to form coaxial annular guide tracks for the inside of the rolling ring, for a thread bobbin carrier attached to the rolling ring and for a bobbin lifter. The side plates with guide tracks are interrupted at one point of the circumference to provide a gap through which the thread can be passed. This enables the thread to be passed behind the current axial position of the bobbin and provide the thread crossover to form a knot. The machine is employed in forming a length of sausage into links by tying knots around the sausage skin at regular intervals. The machine is able to perform this task more economically, more hygienically, more consistently and more quickly than hand tying. The machine forms a proper, self locking knot, not just a tight winding around the skin.</p> |
