PURPOSE:To control rottenness occurring in self digestion of a living microbial cell with admittable food additives, by treating the living microbial cells with an acid in pH not larger than specific value so that they can be dyed with methylene blue, followed by subjecting them to self digestion. CONSTITUTION:A living microbial cell is treated with an acid in pH not larger than 2.5 so that it can be dyed with methylene blue, and it is subjected to self digestion. The acid treatment can be carried out at least partly in the presence of sodium chloride in pH not larger than 3.5. An inorganic acid, e.g., hydrochloric acid, phosphoric acid, etc., an organic acid, e.g., acetic acid, citric acid, tartaric acid, etc. may be used as the acid used in the acid treatment. The acid treatment is preferably carried out at low temperatures, usually at 0-40 deg.C, preferably at 5- 30 deg.C. A 5-25wt% suspension of the living microbial cell is made for self digestion and it is kept at 20-50 deg.C with stirring slightly. |
