<p>The smoke resulting from the breakdown of sawdust by the passage through it of gases at high temperatures, and intended for use in the smoking of foodstuffs, is mixed with steam. For pref. the steam is heated to a temperature between 180 and 250 deg.C., and part of the mixture of smoke and steam is condensed before it is brought into contact with the foodstuffs. To produce a smoke for treating foodstuffs without the soot and tar particles which in other processes may spoil the taste. By partial condensation of the mixture of steam and smoke, these materials are removed, and the humidity of the smoke can be regulated.</p> |
