CONSTITUTION:In coagulating soybeam milk using a coagulating agent having an immediate effect, e.g., magnesium chloride, calcium chloride, etc. or one comprising a combined agent consisting mainly of the coagulating agent, the coagulating agent is make in a state of supersaturated solution, and added uniformly to the soybean milk, not cooled, after squeezing bean-curd refuse. |
