The skin or cuticle covering the cap of the mushroom is removed before any stage of cooking or preserving is undertaken. The cuticle is pref. peeled away at the time the mushroom is gathered. Pref. the mushroom is cleaned after gathering, the stalk is sepd. from the top (pileos) and the cuticle is then peeled away from the top of the mushroom. Both stalk and pileos are then precooked in boiling water for a period of less than 6 minutes. The stalk and pileos, after precooking, are drained, rolled in flour and then frozen. The treatment raises the status of the previously little favoured Boletus Luteus to equal that of the more popular mushrooms such as Boletus Edulis etc. |
