Microbial protease prodn. - by fermentation of Bacillus licheniformis P-300

In a new process for the prodn. of protease, a strain of Bacillus licheniformis P-300 is cultivated in a nutrient medium contg. assimilable carbon and nitrogen sources, and proteolytic enzyme produced during the cultivation is subsequently separated off. A protease of high enzymatic activity is produced in high yield. Due to its high enzymatic activity and its wide stability spectrum (esp. towards chelating agents such as nitrilotriacetic acid and EDTA), the protease can be widely used in industrial cleansing, e.g. in breweries, dairies, meat and fish processing plants, and other food processing plants.
