PURPOSE:To prepare a ''shao-mai'' (a purse-shaped Chinese dumpling stuffed with minched pork, etc.) having plain and delicious taste and a desirable shape, by turning a formed ''shao-mai'' upside down, i.e. facing the opening of the purse downward, and steaming the ''shao-mai''. CONSTITUTION:A ''shao-mai'' is steamed at an inverted position, i.e. facing the opening of the ''shao-mai'' downward, to drain off the harsh components of meat and vegetables in the stuffing. |
