Washed tomatoes are separated into juice and residue; colloids contained in the juice are coagulated by adding polyvalent metal ions, advantageously Ca cpds. and the colloids are separated from the serum to be concentrated. The separated colloids are then combined with the concentrated serum in the presence of added H3PO4 or its salts, e.g. 1/2% H3PO4 or 1% Na3PO4. The flavour, colour and aroma of this concentrate is of superior quality. |
