PURPOSE:To obtain a frozen food containing wheat flour capable of preventing the surface from drying during the preservation, blister or wrinkles from occurring due to dew condensation in thawing, cracking due to drying, insufficient volume and surface scorch unevenness in baking, the appearance from changing due to sore and spots and texture from hardening, and imparting moist texture to the thawed food. CONSTITUTION:This frozen food contains wheat flour and an edible substance comprising a structure containing cellulose regenerated from an aqueous solution of an alkali metallic hydroxide and a guest component of a polypeptide and/or edible polysaccharides and contains the edible substance in which the cellulose forms a sea component surrounding islands of the polypeptide in use thereof as the guest component or forms a homogeneous continuous substance with the edible polysaccharides in use thereof as the guest component and the sea component or the continuous substance is present in an amount of at least >=10% in the structure and in an amount of 0.1-10wt.% expressed in terms of solid contents in the resultant product. |
