PROBLEM TO BE SOLVED: To produce a dried thick bonito slice that has a less tinge of red and enhanced whitish good appearance over the whole surface without reduction of productivity, and thus induces customers to buy. SOLUTION: This dried thick bonito slice is produced by cutting a raw bonito to slices of appropriate size by the conventional method, soaking the slices of raw bonito flesh in an aqueous solution of calcium ions, boiling the solution with the bonito slices soaked in, draining them off water, then drying and smoking the bonito slices through the traditional process to obtain rough dried bonito slices. In thus obtained dried bonito, the color of ordinary flesh becomes light pink although pink in the traditional method, dark red color of dark flesh parts seen in the traditional dried bonito becomes lighter to such a degree that customers do not feel unpleasant, and the dried flesh becomes totally whity, thereby eliminating additional troublesome job to remove the parts of dark flesh and improving productivity and appearance so as to induce customers to buy. |
