发明名称 PREPARATION OF CAKE
摘要 PURPOSE:To prepare a cake having improved septic resistance, water retention, and good sourish taste, by impregnating fruits of ume (a Japanese apricot) with syrup, followed by storing the fruits in a waterproof container sealed airtightly. CONSTITUTION:Raw or half-dried fruits of ume are soaked in a syrup prepared by blending a saccharose, e.g., sugar, as a main ingredient, with other sweetening, an alcohol, a seasoning, a spice, a beefsteak plant, fats and oils, and an emulsifying agent and impregnated with the syrup, and the acid component is partially extracted to weaken an acid taste. After removal of excess syrup, the fruits are put in a waterproof container, e.g., one made of plastics, aluminum, waterproof paper, and the container is sealed, especially in airtight, and preferably stored at low temperatures.
