<p>PROBLEM TO BE SOLVED: To provide a method for producing a sake capable of adding the outer part of unpolished rice into the sake, although conventionally the outer part of the unpolished rice represented by a germ or a rice bran can not be added to the sake, since it gives a bad effect to the quality of the sake to an extent that the sake itself can not be produced. SOLUTION: This method for producing a sake is to add the outer part of an unpolished rice to the sake after finishing the saccharification and fermentation processes of the sake itself and killing the activity in the sake by a heating sterilization.</p> |
