PURPOSE:A ground fish meat is mixed with a concentrated soybean protein of which the soluble nitrogen index is adjusted to a specified value by treating defatted soybean with water-containing alcohol to give inexpensively said food with shrimp- like texture and taste. CONSTITUTION:A ground fish meat, flavors and spices are mixed with a concentrated soybean protein with a soluble protein index of less than 25, which is obtained by washing defatted soybean with water-containing alcohol and drying the product. The mixture is formed and boiled to give said shrimp-like food. The alcohol is, e.g., methanol, isopropanol or ethanol, however, ethanol is preferred from the view point of the use as food and the concentration is preferably 50- 80wt%. The particle size of the concentrated soybean protein is preferably finer than 100 mesh and preferably 30-60% of the concentrated soybean protein on the solid basis is mixed with 70-40% of the ground fish meat. |
