Extraction of an active ingredient (I) from apple teguments (not defined) comprises reducing dried apple teguments to a fine powder, preparing an aqueous solution containing at least 8 volume % of the powder, subjecting sugars and proteins to enzymatic hydrolysis, inactivating the enzymes by heating, and sterile filtering the product. An Independent claim is also included for (I) having a solids content above 100 g/l, a pH of 4-10, a total sugar content of 40-300 g/l and a total polyphenol content of 900-2000 g/l (expressed as gallic acid).
