PURPOSE:To obtain a yeast essence free from yeast odor, by thickening a yeast- extracted solution prepared by adding fruit juice to a yeast suspension and carrying out fermentation and extraction, while recovering the fermentation flavor and fruit juice flavor and by adding said flavors to the resultant thickened yeast essence. CONSTITUTION:A yeast-extracted solution prepared by adding a fermentable fruit juice to a yeast suspension, carrying out fermentation and extraction is thickened while recovering the fermentation flavor and fruit juice flavor, followed by adding said flavors to the resultant thickened yeast essence, thus obtaining the objective essence with good flavor. |
