A filleting machine carries fish with the tail in front, past a pair of ventral filleting knives 3, dorsal filleting knives 4, rib knives 5 and separating knives 7. In order to achieve a better yield of fish meat, as well as a smoother cut surface, there is introduced between the ventral 3 or dorsal filleting implement 9 and the rib cutting implement a separating implement which cuts through the meat strips remaining alongside the backbone at the ends of the abdominal cavity and leaves the connection between the fillet and the backbone remaining in the tail region, so that the rib cut can be made under rigid control of the fillet and as a continuation of the ventral filleting cut. <IMAGE>
