发明名称 SEPARATION OF SALTTSOLUBLE PROTEINS FROM KRILL
摘要 PURPOSE:To separate hard and easily handleable precipitate containing a limited amount of water and composed mainly of salt-soluble protein fractions, by the centrifugal separation of a suspension obtained by grinding the flesh of krills, at a centrifuging efficiency of higher than a specific value. CONSTITUTION:Small crustaceans, e.g. krill, are pref. stripped, and the flesh is homogenized together with >=1 part, pref. about 10 parts, based on 1 part of the flesh, of water with a homogenizer, etc. to obtain a suspension of ground muscules. When a proper amount of saccharides such as sucrose, starch, other proteins, etc. are added to the water, the amount of water can be reduced, and the water content of the objective salt-soluble proteins can be controlled to 70-80%. The suspension thus prepared is centrifuged at a centrifuging efficiency of >=1,000, pref. about 10,000-12,000, to obtain jellied precipitate composed mainly of salt-soluble proteins. The precipitate keeps gel-forming characteristics comparable or superior to the ground fish prepared from fresh fish meat, even after storing for 3 months in a frozen state.
