FIELD: chemistry. ^ SUBSTANCE: present invention pertains to the method of producing modified gum-arabic, used as an emulsifying agent in food and pharmaceutical industry. Description is given of the method of producing modified gum-arabic, as well as an emulsifying agent and emulsion based on it. The method of producing modified gum-arabic involves a stage where gum-arabic is heated such that, loss of moisture does not exceed 3%, or heating gum-arabic in dry conditions such that, loss of moisture does not exceed 3%.
