摘要 A bread having a calorie content lower by about 25% per unit of weight is produced, which bread is very similar to conventional bread with respect to appearance, taste and structure. To achieve the reduction in calorie content, in the production of the dough 22-25% of the flour is replaced by cellulose, where the protein reduction generated as a result can be compensated by addition of protein.
