PURPOSE:To prepare a relish having the taste and flavor of both sea urchin and cheese, by mixing seasoned sea urchin eggs and cheese in the presence of alcohol. CONSTITUTION:100pts.wt. of powdered cheese is mixed with 50-95pts. of salted sea urchin eggs, seasoned and unground sea urchin eggs or paste of seasoned sea urchin eggs. 60-99% Ethyl alcohol is added to the mixture and heated at 60- 70 deg.C. The semi-fluid mixture thus obtained is kneaded and charged into a vessel without delay. The amount of ethyl alcohol is 1/4-1/10 per 1 part of the mixture. |
