<p>A two-component compressed, shaped, carbonated gum confection is made of a gum portion and a finely divided candy portion, each of them having a controlled water activity between 0.10 and 0.30 which is capable of surviving long periods of storage when packaged in a moisture-resistant material. The candy portion is preferably a bubble gum with a high gum base content of at least 28%; the candy portion comprises an amorphous candy glass containing .05 to 15 milliliter of carbon dioxide in each gram of candy. </p> |
