A mixture of cis- and trans- cinnamaldehyde containing isomer cis in a proportion equal to or higher than about 10% by weight, preferably of between about 10 and 30%, is useful for the manufacture of flavouring compositions destined in particular to reinforce, improve or modify the organoleptic properties of flavours of chinese cinnamon type. The cis-cinnamaldehyde may be made by irradiating a mixture of the trans-isomer, hexane and xylene with a mercury lamp, and fractionating. |
