PURPOSE:To expal bad-smelling components with steam, by impregnating a bad- smelling food material with steam in vacuo under heating, and expelling the condensed steam under a high degree of vacuum. CONSTITUTION:Bad-smelling food materials, e.g. a sea tangle from China, animal or fish meat, containing bad-smelling components, are introduced into a vacuum pressure vessel and deaerated in vacuo, and heated to a permissible temperature while impregnating steam into the materials. At a temperature of 100 deg.C or above, a drain valve is opened to discharge the drain, and the vessel is evacuated to a high degree of vacuum to evaporate the high-temperature moisture from the material by itself. Thus, bad-smelling components are expelled with the steam. The operations are repeated once or more, if desired. |
