PURPOSE:To apply sugar to the surface of food, and to prepare a sugared fried food, by frying the food in an edible oil containing sugar. CONSTITUTION:A material, e.g. sliced sweet potato, is put into an edible oil heated at about 160-165 deg.C together with sugar containing 15-20wt% of water, or separately, and fried. Preferably, the sugar is added immediately after the material is put into the oil. |
