PURPOSE:A solid seasoning having the sourness without change or oxidation, stable in air, scarcely absorbing moisture even for a long time, comprising citric and ascorbic acids, and sugars, or/and starch. CONSTITUTION:A seasoning consisting essentially of (A) citric and (B) ascorbic acids, and (C) sugars or/and starch, wherein the amount of (A) is 4-12 times that of (B), and (C) is 10-40wt% based on the total amount of the components. 0.01-20wt% of (A) may be substituted by sodium citrate, 0.01-15wt% of (B), by sodium ascorbate. 0.001-3wt% of lemon flavor or/and its compound may be incorporated, if desired. |
