The foodstuff is suspended on trolley racks placed within the processing chamber and the smoky flavour is produced by circulating uniformly (4, 3, 6) through the chamber air into which an aromatic (1) has been sprayed (2) so that the droplets are evenly distributed in the circulating air. The surfaces (3) onto which the aromatic is sprayed (2) are heated. Simple, cheap method of ensuring uniformity of product. |
