PURPOSE:The essence is extracted from internal organs of livestock with hot water, docolorized, deodorized, concentrated under reduced pressure or spray-dried, thus producing said food of internal organ essence with high nutrition. CONSTITUTION:Internal organs obtained in the course of killing and processing livestock such as cattle, horse, swine, sheep, chicken are cut into slices or crushed and the essence is extracted therefrom with hot water. Usually only water is used for extraction, however, ethanol, acetic acid, citric acid, sodium bicarbonate may be added in an appropriate proportion to increase the extraction efficiency. Then, the essence is decolorized, deodorized to remove the causes of bad tastes and concentrated or dried by a known method to produce the objective product. |
