PURPOSE:To reduce the odor characteristic ''natto'' (fermented soybean), and to obtain ''natto'' containing sweet corn and having mild taste, by inoculating a mixture of steamed soybcan and sweet corn with Bacillus natto, and fermenting the mixture. CONSTITUTION:Steamed soybeans obtained by steaming swollen soybeans, are mixed with sweet corn which is steamed for a short time, and inoculated with Bacillus natto; or each of the steamed natto and steamed sweet corn in inoculated with Bacillus natto, and mixed together. The mixture is fermented to obtain the objective ''natto''. |
