Prodn. of stuffed prods. consisting of two different, cylindrical, coaxial parts, comprises first coaxially extruding two cylinders of different pastes, of indefinite length, in a casing. The extrudate is divided up into the required lengths, each length having closed ends, then subjected to protein-coagulation and opt. peeling to remove the casing. The new feature is that the consistency of the paste for the inner portion is thickened so as to prevent its escape from the outer portion at the ends of the prod. An appts. for this process is also claimed. The process is esp. for making sausages etc. based on meat or fish; particularly cocktail-type sausages. |
