PURPOSE:Cleaned soybean in crushed, made to absorb water, boiled to form soybean milk, which is made into ''tofu'' with good storage stability and high quality in a short time. CONSTITUTION:Soybean from which contaminants are removed is polished by grinding or with pressurized air or washed with water to remove and germs sticking on the surface of the soybean. Then, the soybean in crushed into particles of 40-50 mesh and dipped in 5-10 parts by wt, per 1 part of the soybean, of water at 60-100 deg.C for 3-5min to absorb water. The crushed soybean is boiled, filtered to give soybean milk, to which a coagulant is added and the product is formed into ''tofu''. |
