PURPOSE:To prepare a food from tangle, keeping the natural characteristics and taste of the tangle, by boiling tangle in vinegar and water, seasoning the boiled tangle, and drying the product. CONSTITUTION:500g of tangle is washed with water, and boiled in water containing about 1l of vinegar. The water-boiled tangle is further boiled for 1-2hrs often adding 320cc of soy sauce, 1kg of sugar, 90cc of sweet sake, and 20g of salt to the above vinegared water. After boiling, about 180cc of honey is added thereto, left to stand for a while, and drained. The processed tangle is dried with a drier, left to stand for a while, cut to desired sizes, optionally spiced with red pepper or coated with sugar, and packed with a sheet of paper. |
