NEW MATERIAL:beta-Methylthioacrylic esters of formula I (R is alkyl or aryl groups). EXAMPLE:Methyl cis-and trans-beta-methylthio-acrylates. USE:Flavoring agents, for imparting durable flavors, or modifiers, having a flavor like ''ume'' or grapes, useful for a wide range of food and drink, soap, detergent, cosmetic, health, hygiene, and medicines. PROCESS:Propiolic acid is brought into contact with an alcohol in the presence of an acid catalyst, e.g. sulfuric or phosphoric acid, to form the well-known propiolic acid ester of formula II, which is then reacted with methyl mercaptan in the presence of a reaction accelerator, e.g. isobutyronitrile, in the presence or absence of an inert organic solvent, to give the compound of formula I readily in high yield. |
