<p>The liq. to be cooled is fed into a cooling tank which contains a refrigerated evaporator coil. The coil is in circuit with a vapour-compression refrigeration system comprising a compressor, a condenser, a regulator etc., within the tank a motorised agitator ensures that the liq. is kept in motion adjacent the evaporator coil. The tank is pref. vertical cylindrical and has a removable cover from which is suspended a coaxial, vertical, cylindrical coil which surrounds a central agitator shaft extending axially through the cover. The cover is pref. counter-balanced so that it can be lifted away complete with the coil and agitator. The dia. of the coil is pref. equal to about half the internal dia. of the tank. Used for cooling liq. foodstuffs partic. thick edible fluids such as sauces and soups. Partic. applicable to soups etc. which are precooked and then cooled from about 80 degrees-10 degrees C in 2 hrs. or less.</p> |
