PURPOSE:A hydantoinase originating from a microorganism is made to act on 5- substituted hydantoins to produce D-N-carbamoyl-alpha-aminoacids. CONSTITUTION:A microorganism, which belongs to Aerobacter, Mycobacterium, or Aspergillus and can asymmetrically cleave hydantoin rings by hydrolysis, is cultured in a medium containing pyrimidine metabolites or their analogs to form hydantoinase in the medium. The resulting culture medium, bacterium cells, their treated products, or hydantoinase extracted from the cells is made to act on 5-substituted hydantoins of formula I (R is alkyl, aralkyl, phenyl, substituted phenyl, thienyl, furyl, pyridyl, thiazolyl, imidazolyl, indolyl) to produce said D-N-carbamoyl-alpha-aminoacids of formula II (R is the same as the above). |
